Agreed. Not all people that are peaceful and tranquil are Jedi, not all people that lash out are Sith. They have their own philosophies one must make a consious decision to adhere to before one can call him/herself one or the other. A Jedi can lash out in anger. It is against the Jedi way, but it is their way to learn from mistakes and correct themselves. It does not make one "Grey", but moreso shows they are still human and are still learning.

This is one of the main problems with adapting a religion based on Star Wars--in the fiction, Light and Dark are absolutes. In reality, they aren't.

Dark, maybe - We never really see anything too altruistic from Maul or Sidious.
The rest, Jedi, Sith (and whatever the hell Count Dooku was, freelance?) all seem as wishy-washy and vague as something that would be a great example of wishywashy vagueness.

What's interesting is that Jedi philosophy is faithful to the Jedi in SW canon. But if I talk about Sith philosophy from SW canon and how they use negative emotions to their advantage people get offended.
So I wont.
