Pumpkin Seeds

Quick and easy for this time of year.

Step one: Dig out seeds from that ooey gooey mess you call a pumpkin/jack o lantern.

Step two: Wash

Step three: Drain and spread them on a baking sheet. Sprinkle salt (if desired) and bake them at 250 (degrees F) for 30-40 minutes.

Totally better than the store bought kind because you get to choose the crunchy and saltiness.

First....always wanted to do that

Spicy fried chicken
Chicken (any way you want it)
Black pepper
Cayanne pepper
Bread crumbs
Flour
1 egg(may need more depending on how much you're cooking)
Canola oil

Beat egg until blended
Dip chicken in egg (water can be used if you are avoiding certain foods)
Blend flour, bread crumbs, and spices
Roll chicken in flour
Heat oil to cooking temp
Place chicken in oil and cook 10-15 mins per side
Heat oven to 350
Place fried chicken on rack (a rack on a pan to catch the grease and fat that drip off)
Cook for 35-45mins checking every 10mins to make sure chicken doesn't dry out
Remove and enjoy

3 cheese baked macaroni

1 block velveta cheese
1 block velveeta queso blanco
1 pack shredded cheese (mazzerella,swiss,pepper jack or whatever you like)
Grated parmesan (if desired)
Bread crumbs
Macaroni

Melt both block of velveeta in saucepan
Cook noodles until al dente
Mix noodles and melted cheese in glass pan
Sprinkle shredded cheese,parmesan, and bread crumbs over top
Bake in oven at 350 for 45 mins

Chicken and Dumplings... Southern style. ;)

Ingredients:

• (2-1/2- to 3-pound) broiler/fryer
• 2 Quarts water
• 1 Teaspoon Salt
• 1/2 Teaspoon Pepper
• 2 Cups All-purpose flour
• 1/2 Teaspoon Baking soda
• 1/2 Teaspoon Salt
• 3 Tablespoons Shortening
• 3/4 Cup Buttermilk

Preparation:

The chicken...
Place chicken in a Dutch oven or large kettle; add water and 1 teaspoon salt. Bring to a boil; cover, reduce heat, and simmer 1 1/2 hours or until tender. Remove chicken; let it cool slightly. Bone chicken, cutting meat into bite-size pieces; set aside. Strain and save Broth.

The dough...
Combine flour (2 cups), soda(1/2 tsp), and salt(1/2 tsp); cut in shortening until mixture resembles coarse meal. Add buttermilk, stirring with a fork until dry ingredients are moistened. Turn dough out onto a well-floured surface, and knead lightly 4 or 5 times. For drop dumplings, pat dough to 1/4-inch thickness. Pinch off dough in 1 1/2-inch pieces, and drop into boiling broth. To make rolled dumplings, roll dough to 1/4-inch thickness. Cut dough into 4- x 1/2-inch pieces.

Put it together...
Bring broth to a boil; add pepper. Drop dough, one piece at a time, into boiling broth, carefully stirring after each addition. Reduce heat to medium-low, and cook 8 to 10 minutes or to desired thickness, stirring occasionally. Stir in chicken.

Serves 4 to 6.

Jambalaya... done in a crock pot

Ingredients:

12 ounces boneless skinless chicken breasts
1 1/2 cups green peppers, chopped
1 medium onion, chopped
2 celery ribs, sliced
4 garlic cloves, minced
1 (14 ounce) can whole tomatoes
1/3 cup tomato paste
1 (10 1/2 ounce) can beef broth
1 tablespoon parsley
1 1/2 teaspoons basil
1/2 teaspoon oregano
1 teaspoon Tabasco sauce
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1 lb shrimp, shelled
3 cups cooked rice

Directions:

1. Cut chicken into 1 inch pieces.
2. Put all ingredients (EXCEPT shrimp and rice) in crock pot.
3. Cover; cook on low for 8 hours.
4. Add shrimp the last 20 minutes of cooking.
5. Stir in rice before serving

Sorry , it has recently been brought to my attention that I am still a redneck! Hahahahha :P

If there is any question as to what a Broiler/fryer is (from the chicken and dumplings recipe) allow me to explain. It is a young chicken. (Usually 6-8 weeks old) And the weight that went with it was 2 and a half to 3 pounds. The reason for this call out is that you want about 2 1/2 to 3 pounds of chicken and you want it tender. One could use a Cornish hen, but the meat would not be as tender and the weight would be on the skimpy side after boning. Of course you could use half a (regular) whole chicken, providing you can cut through all the breast bone, but then half to store half a chicken. And it will again, be not as tender.

Granola

So you'll need:

2 cups of oats
1/2 cup of honey or, even better, maple syrup
1/3 veg. oil or cooking oil
1-2 cups of whatever nuts or seeds you like. I do 1/2 sunflower seeds and over a cup of mixed nuts.
Optional dried fruits

Preheat oven to 290-300 degrees Fahrenheit depending on altitude. Mix the ingredients in a large bowl and pour onto a greased cooking sheet. Cook for 30-35 minutes stirring halfway through the bake time. Pour the granola onto a cool baking sheet or tin foil and add fruit. Let sit until cooled.

Edit: If you want your granola to be more clumpy do not stir it (upon taking it out of the oven) until it has cooled. Also, adding a bit of brown sugar will help it stick (1/4 c). More oat to nut ratio also helps, becasue the oats are what stick together easy.

Also, the granola won't appear completely dry when you take it out, but that's okay. As it cool it will harden.
