Help! I need gluten free recipes!

It's official... I have to go gluten free, and well... why is it so hard to find gluten free recipes? They all replace wheat products with their gluten free equivalents and I can't have those either! So if anyone has any genuine gluten free (bread free) recipes that are good for summer, I'd greatly appreciate it!

I mean... aside from just eating meat and salad, I'm not sure what to do... although meat and salad doesn't sound too bad! :laugh:

Basically, buy non-processed foods exclusively, and simply never buy/consume any grain... That leaves you plenty of choice... I wouldnt worry about finding alternatives to the cereals, simply just forget about them. Sure that means no more bread, pizza or cake, but the way you can look at it is you can have tasty mediterranean dishes (these are nice for summer) or sashimi instead... And for your sweet tooth (check the packaging just in case), you can always get yourself some ice cream :)

Unless you have a condition where gluten presents an immediate danger to your health, I wouldn't worry about gluten contamination of non-gluten foods.

and if you need something inexpensive and filling, there's always rice. I know it's a grain but this one is gluten free... There's also potatoes, and a gratin makes awesome winter food.

Thanks... I mainly just have to stay away from bread and well anything made from flour. I don't think it will kill me to have something once in a while... like if we order pizza or cake on someone's birthday since it wouldn't be that often. It's just regular consumption that has to stop cause it's causing me gut problems.

I eat rice quite a bit and it doesn't bother me, so I'm good with that. Potatoes I have to limit... :(

The hard part is that my daughter and husband can still have bread and stuff... and I LOVE bread, so it's going to be hard staying away from it.

I don't buy a lot of processed stuff and I hate cereal, so no issues there. I usually eat eggs for breakfast. Mainly I just need some recipes for lunches and dinners so I'm not eating the same stuff all the time. That would just get boring. Most of my lunches atm involve eating some kind of sandwich or wrap, which I can't do... but there is always tuna with rice crackers.... hmmmm...

I too should be staying away from gluten.

But then there's breakfast triple sandwiches. And chicken/bacon cesar wrap. I've got a feeling I'll be going on a rampage today.

I guess if you're trying to replace this kind of meal you have to go for salads.

People who have no choice and do it everyday will know what kind of cold/quick lunches you can safely have better than anyone here I think. (celiacs have an extreme intolerance to gluten)

Despite my desire to be vegetarian, I still [strike]need[/strike] enjoy crumbed chicken, and instead of normal flour or breadcrumbs we use millet flour and it works super. Boss lady here is strict gluten free and her parents were bakers, so she really misses bread.

Yeah, I'm thinking I might just try wheat free and see how I go, instead of going completely gluten free. I should be fine with millet flour and oat flour I some things. I've never tried millet flour so that should be interesting.

I know someone with celiac as well. It's pretty nasty. She gets so sick when she has gluten. Right now I've only noticed problems when I eat bread and now pasta which used to not be a problem for me.

I love salads and stuff and just read that they're the best thing for good gut health, and I tend to eat salad every day during the warmer months, but I would love to be able to try different things as well so I don't get bored. Even if it's different salad recipes. Lol

Just 2 but there are a bunch on that site. I've been cooking paleo for 2 1/2 years, which automatically = gluten free.
