I find people give too much importance to age. they link behavioural expectations with age. I find this distasteful. "You shouldn't be doing that at your age". If a 60 year old woman wants to go clubbing, so be it. I'm not going to prevent people from doing what they like just because I don't like the flesh on display or something. It'd be dishonest and very distasteful. Unfortunately most people do not feel as I do on these matters.
At the same time I wouldn't say age is just a number. Age is an indicator of experience. Perhaps not an accurate way to measure experience, but to my knowledge, the best available.

I don't get it either. Age is just a number.

Its a potential for experience. The rub is what kind of experience? 70 years of being catered too produces differently than 70 years of hardship. 70 years of wispy indecision and 70 years of focused discipline as another example. One can't trust it. Just watch them. ALL of them...

I find myself saying this to people quite often.
To what extent is it actually true?

Past 18 years old, it is just a number based on biological maturity for a whole and not an individual.

Another thing... I don't think it's as "absolute" as some people make it out to be. Don't be caught under social stereotypes by buying into absolutist maxims like "Age is only a number" which is another way of saying "Age is just a number".
