Does anyone know where I would be able to stream / find the movie The Hidden Fortress, on which SW was based / inspired? I haven't been able to find it anywhere.

Have you tried Hulu? Last time I looked they had at least a few Kurasawa films available. I'm not sure if you need to be a paid member or not though.
