"So... what should we make for dinner?"

I literally never know the answer to this question. Most people have a kind of go-to recipe that they make fairly often, so I'd love to hear yours! Links to other websites work, or if you just want to type out the whole thing because it only exists in your head, go for it.

I've got two recipes I love right now.

A vegetarian lasagna I made a couple weeks ago and literally cannot stop thinking about:

One-pan mexican quinoa. So easy to make and tailor to what you want, and only one pan to clean!:

Edit: I realize this probably should've gone in the "Miscellaneous" category of the forum. My bad, feel free to move it!

As a former Culinary Student, and now a enthusiast who loves to teach others the joy of cooking, I have oh so many recipes in mind.

But, forced to pair them down, I'd actually say I have two top ones. Interestingly enough, I had just shared these with Kit yesterday when she asked me this same question, talk about coincidences, haha!

Vampire Killer Express Ramen:

Also, The Food Lab is literally one of the best recipe and cooking resources. Ever. Full stop. Check 'em out!

No worries about it not being vegetarian! I actually eat meat, but due to a combined lack of skill/money/motivation I tend to find vegetarian recipes easier for me to make. Haha.

Chicken Yarro

A recipe my father learned from a man named, you guessed it, Yarro while living in Ghana as a child. We have had to tweak it in order to make it in New Jersey and New York, where some of the ingredients, native to Ghana, are not available.

You want this in your life.

Trim chicken things and drench in a mixture of flour and:
  • curry (go crazy)
  • salt
  • pepper
  • oregano
  • a bit of cayenne
  • maybe rosemary
Brown a bit of butter in a dutch oven, or a pot suitably wide and tall, over medium heat. Brown the outside of the chicken in order to cook the curry. Throw in garlic toward the end to cook it a bit. Once the outside of the chicken is a beautiful golden brown, but still raw on the inside, pour chicken stock to just cover the chicken and lower the heat. Then, throw in a generous helping of sour cream. Stir so that the gravy is more or less uniform. Cook until the gravy begins to shift from white to the beginnings of tan. The chicken should be cooked through and astonishingly tender at this point. Check before you eat it.

Serve over rice.

Darn it Wescli, I was literally just about to post something like this. But I might have said Dominoes instead. They're kind of interchangeable for me.
