When "fitness" isn't an option
Fitness is always an option, it just might be a really difficult one.
Short walks and stretching are a good foundation to work from, swimming is good too.

I suggest working on micro muscles and doing micro movements. Simply flexing your muscles is enough to keep them tone and working. Explore each and every muscle. Have fun tapping into each muscle of your body. See if you can flex and move each one with your mind.
Simply playing games and fun movements is enough to get your body moving.
Start small. do little things. find things that feel good and bring enjoyment to your world.

I would caution that not all two disorders/diseases are the same, Spartan, even when they have the same name. What your significant other may be able to do is going to be vastly different than what Cryo can do compared to...say... What my mother with fibro is capable of doing. Unfortunately for some, fitness truly is not an option...
That said. . . . swimming and other water exercises are good for some chronic pain disorders.

The article linked makes reference to - two different sets of circumstance a person might be in when needing to make a decision.
A) everyday, up and about circumstance (for which cognitive therapy words to some degree)
b) the qualities of incapacitation (the article uses depression as the example)
The author says: a+b do not equal
(as in cognitive therapy works except when it don't)
Since reasoning is impaired when other systems aren't functioning properly, what ever skills that are necessary for one's body are just as critical as skill sets for learning to choose. In my opinion, a weakness in the present healthcare system. There is no integration of bodies parts . . . (lol) in my opinion.

As others have said, walking and hiking are good options, swimming is always a good option. Diet is important but if weight loss is an issue then calorie and macro tracking may be an option also to insure that you are not burning more calories than you take in.
I don't think there is much more that I can add to the conversation other than realize that even within the Jedi path the path of the mind is as important as the physical path, and everyone should play on their strengths.
