Well this really depends on your lore, but in Star Wars: Knights of the Old Republic, Yellow, Blue and Green lightsabers were for the different classes as detailled below. Red was for the dark siders.
Jedi Consular (Green): "This Jedi seeks to bring balance to the universe. They focus less on physical combat and more on mental disciplines in order to augment their mastery of the Force."
Jedi Guardian (Blue): "This Jedi battles against the forces of evil and the dark side. They focus on combat training and masterful use of the Lightsaber."
Jedi Sentinel (Yellow) "This Jedi ferrets out deceit and injustice, bringing it to light. They strike a balance between the physical and mental disciplines of the Jedi Order."
Jedi Consular (Green): "This Jedi seeks to bring balance to the universe. They focus less on physical combat and more on mental disciplines in order to augment their mastery of the Force."

Before KOTOR and the prequels, I had a theory that the colors did have a meaning. I proposed that blue was for inexperienced Jedi, or former Jedi, and green was for masters. If you follow the story up through Episode 1, it kind of makes sense.

colors can be used to symbolize emotional, mental, or energy state...as well as skill level etc

Obi-Wan was just a blue type of guy. Plus it probably gave him the suprise advantage when he battles the sith

Well, that's the mystery, the flaw in my theory. Or not. He did, after all, say he was "once a Jedi Knight". That may explain the original trilogy, but the prequels are another matter, and I don't give them much credence anyway. Were it up to me, Obi-wan would have kept Qui-gon's green saber after killing Darth Maul with it. *shrug*

I think that would be against the rules; a lightsaber represents all values of the Jedi who crafted it, and as such would it would be a kind of profanity for Obi-Wan to keep it.
