Jedi symbol

I've noticed that the Jedi Symbol represented here faintly resembles a five pointed star. Was this done intentionally so that each point represents the five aspects of Jediism: Pure Land, Christianity, Buddhist, Pagan, and Sith? Also, what does the sun in the middle represent?

Yes. The middle is a sixteen point star for the sixteen ... I forget. You can look it up it the book.
