Wow, apparently cottage cheese dates back to Mesopotamia. That's crazy! I could talk about cottage cheese all day. I like to put an obscene amount of black pepper on mine.

You just add an acidic substance to pasteurized milk, and the curds separate from the whey. It's essentially the most basic cheese possible. I too prefer large curds.

Wait can you do that with like any cheese? Because I can get some good curd from a little north across the Wisconsin border and make my own cheddar cottage cheese?

It's more like all cheese starts out like cottage cheese, though that is worth a try. Cheddar cottage cheese does sound quite delectable.
